Weight Watchers Wednesday: Success and Recipes

I am on board the fit train and I’m not planning on getting off any time soon. Because it’s working!

I’ve had a great week and I lost 4 pounds from last Wednesday to today. I’ve been counting points and haven’t gone over my points yet. I’m saving up my flex points for the weekend, so I can enjoy myself when the opportunity presents itself.

I’ve also been going to the gym on a regular basis. I have gone four times each week for the past two weeks. I started going to Body Pump classes and I love it. It’s a huge challenge and completely wears me out, but I’m enjoying it. It’s obvious the I’m getting stronger already. My clothes are already fitting better and I am very encouraged.

When I geti n my groove with counting points, I get so into it! I love the challenge and find it so much easier to resist something bad when I’ve spent four days being good and avoiding bad things. Why throw all of that away on a cupcake?

I want to share my meals with you and hopefully give you all some ideas of what you can eat and cook at home.

For breakfast, I’ve been eating one of three things:

1) Weight Watchers 2 point bagel with I Can’t Believe It’s Not Butter spray and all fruit strawberry preserves (3 points)

2) an Egg Beaters egg white omelet with one triangle of sliced Laughing Cow Swiss cheese (3 points)

3) Special K protein cereal with skim milk (4 points)

The omelet is my favorite breakfast option because it contains so much protein and really keeps me full until lunch.

For lunch, I eat a Lean Cuisine or Smart Ones. I really do enjoy these.

For dinner, I’ve been cooking. One of the hardest things about sticking to Weight Watchers is keeping your husband’s tummy satisfied. This is where the Cooking Light: Fresh Food Fast cookbook comes in. These are our choices for supper this week and they’re all linked to the recipe on myrecipes.com. I figured up the points per serving using my points calculator. Cooking Light provides all the nutritional information, so it’s easy to keep track of what you’re eating. If you substitute ingredients, be sure to account for that when calculating your Points.

Black Bean and Corn-Topped Potatoes 5 Points (so delicious! We ate these on Saturday and Sunday and Todd absolutely loved them!)

Portobello and Black Bean Quesadillas 5 Points (again, completely delicious and completely satisfying! Dipped in salsa, these were even better.)

Grilled BBQ Chicken Sandwiches with Spicy Avocado Spread 7 Points (I made this last night and plan on making them again tonight. I only make enough chicken for one night’s worth. But they took 5 minutes to prepare and they were so yummy!)

Creamy Garlic Shrimp and Pasta 7 Points (On the menu for Thursday night and I can’t wait. I’m such a sucker for pasta.)

Grilled Chicken with Rustic Mustard Cream 6 Points (We’ll make this on Friday night or Saturday night, depending on when we might leave room to go out to dinner.)

The only meals that really need a side dish are the grilled chicken and the BBQ chicken sandwich. I used Baked Lays for the sandwich and steamed broccoli for the grilled chicken. The chips were 2 points and the broccoli was 0 points.

I planned out all the meals on Saturday afternoon and we went grocery shopping on Sunday for everything. It has been so nice to have everything in the house and not have to run out to pick up any last minute items.

So now I’m losing weight and making myself more domesticated! It’s a win/win!

Great job on the 4 pounds–that’s awesome!! I am newly inspired–thank you! Those recipes sound fantastic! And you’re right, for me, the hardest thing is also keepin gmy husband happy with the food too.

4 POUNDS! Girl, that is awesome! I am so proud of you. Body Pump is super fun. My favorite thing about lifting weights and getting strong is that I can eat more, since my body is burning more calories- hee.

It is so encouraging to see the scale move down, isn’t it?! Congrats. One of my favorite light recipes is for black bean cakes that I make with a side of corn & green peppers that I sautee. I found the recipe in my Fitness magazine and we make it at least once a week. We’ve also had a lot of success with Cooking Light recipes – they tend to make me AND B happy, which is hard when he has a big appetite and I’m watching what I eat. Our favorite so far is chipotle rubbed chicken breasts baked with sweet potatoes.

we just boarded the fit train two weeks ago in our house and have been doing weight watchers. i know you’re not “required” to use your 35 flex points but do you have to figure in the activity points or are they considered extra if you have earned them? i know you’re supposed to eat all of your points every day in order to lose weight but wasn’t sure if that was the case with activity points.

Thanks for introducing me to Cooking Light! My husband is super skinny, so I echo yours and the other comments about struggling to find meals that both of us can manage! I’ll probably end up making all 4 servings and letting him have two at dinner and then I can have the leftover one for lunch!

I also am huge Smart Ones, Lean Cuisines girl. So conveniant and yum! and so many options!

YUM. I have printed all of these. We run into the same issues in our home…hubs needs to eat more to feel full and he doesn’t need to count calories. But thankfully he is very supportive of my new health kick! Thanks for these new recipes…

You are doing great. I am big believer in Weight Watchers too. One of my friends is counting points right now too. This always means that her husband goes on a diet by default, which is so annoying watching him drop weight so quickly. Anyway I was over there house for lunch during the work day last week (she stays home, so I try eat lunch with her during my break sometimes). Her husband came for lunch and started fixing his own lunch. It started off good…He heated up a Smart Ones. Then he finished that off with two hot dogs sans bun. I was dying laughing. My friend was like what a waste of a Smart Ones. Her husband was like “What? This chick food just isn’t enough for me.”

You Rock!!! I didn’t do as well this week but I hope to do better next week!!! I love the Healthy Choice full meals lately on top of the Smart Ones I normally buy. I always thought they would be awful but I’m still surprised at how delicious they are. ;) XOXO

Congrats to you Erin! I’ve lost three lbs so far, been cutting out Diet Coke (because the artificial sweetener makes me crave sugar) and extra eating. I need to work out more, but I’m getting better. I’m singing up for WW at work next week, and that is reall going to help I think! Love the new header as well. Keep doing what you’re doing, and I’m gonna steal some recipes as well!

I can’t wait to try these recipes. I am thinking about joining weight watchers again. I think if I make myself go to the meetings it would help. It is just so hard for me to resist chocolate!

Congrats! 4 lbs is a great start…I’ve dropped 3 this week and I think a lot of it had to do with me drinking ZERO alcohol. Luckily, I haven’t had any social functions to attend. We’ll see how this weekend goes :s

WOW! Awesome success…I think I am jumping on the fit train with you. Thank you SO much for posting those recipes. I always find it fairly simple to stick with WW for breakfast and lunch, but NOT dinner, unless you just eat a lean cuisine or smart one…or something boring like a piece of grilled chicken and a veggie. But, we have been trying to get more creative lately. Can’t wait to try these out!

I lost 4.5 pounds this week! I’ve given up on counting points and have just been counting cals… but it’s working for me! I have also been busting my butt at the gym… I figure the more I burn the more I can eat!

Great job! I would love to cook more too… right now I don’t have the time (I get home so late), but I want to start cooking more on the weekends.
I have a question for you about Junior League. I emailed you about it, but you might not have gotten the email. I’m thinking about joining my local JL. Did you find it to be a huge commitment? I know the provisional members have more meetings/dues/etc the first year. Also, were you able to select the committee that you wanted to join? I’m still trying to figure out how it all works.

I really like these recipes that you have listed. The Husband is a picky eater about certain things but I think I could still try and give some of these a go! Best of luck in your weight loss and health goals!

I LOVE planning out meals for a week and getting all of the groceries at once. I really think we spend less then if we were to “run in” to the store several times per week. Less impulse buys.

Thank you for sharing your “tried & true” healthy recipes! As you know we had the potatoes w/corn & black beans last night and really liked them. I was a bit afraid we wouldn’t feel full (we LOVE to eat!) but I couldn’t even finish one potato and was still full when I went to bed. Lee was excited to eat healthy but thrilled when he liked the taste and found it filled him up. I’ll most definitely be trying some of the others listed. Thank you…thank you!!!

Congrats on getting back into a healthy routine. I’ve been working on getting back to the gym and have gone twice this week. My hope is to go tomorrow & Friday so I can get 4 days in this week. That will be the best I’ve done since before Thanksgiving. Thanks for giving me some added inspiration :-)

I think planning out your meals and shopping for it (and not buying other stuff) is truly the ticket to sticking with a diet. we have been on christine avanti’s “skinny chicks don’t eat salads” diet (pc combo every 4 hrs) TOTALLY works! (when I plan and shop) I lost 8 lbs and dh lost 15 in about 4wks!! I have also become much more aware of the fat content in my reg foods. wow, its a LOT! congrats to you for perseverence and success!

Way to go! I am trying to get back on the WW train as well. I have a WW bagel or Egg Beaters for breakfast a lot too… great way to start the day! Thanks for the tip on Cooking Light, I will have to check that out!
